RASEDAR KATHAL / KATHAL CURRY

INGREDIENTS:

1. Kathal/jackfruit- 500gm

2. Mustard/ refined oil- 1 tbsp

3. Cumin seeds/ zeera -1/2 tsp

4. Cloves 3-4

5. Bay leaf (tejpatta)

6. oil for frying


INGREDIENT FOR MASALA:

1. Onion -2 medium

2. Tomato – 1 big

3. Garlic – 4-5 cloves

4. Ginger – ½ inch

5. Red chilli powder – 1tsp

6. Turmeric powder – 1tsp

7. Coriander powder – 1tsp

8. Garam masala – ½ tsp

9. Salt – 1tsp


HOW TO MAKE RASEDAR KATHAL /JACK FRUIT CURRY:

1. Peel and cut kathal in to big cubes.


2. Take onion garlic, ginger, tomatoes, cumin seeds, black cardamom, cinnamon stick, bay leaves, red chilli, turmeric, coriander powder and salt.

3. Heat oil in a pan for frying. Add jackfruit cubes in the oil. Saute on medium flame for 2-3 minutes till golden brown in colour.

4. Remove in a plate and keep aside.

5. Take all the ingredient of masala paste in a mixi jar and make a paste and keep aside.

6. Heat 2 tbsp oil in a pressure cooker. Add zeera, black cardamom, cloves, bay leaf, cinnamon stick. Saute on a medium flame for a few seconds.

7. Add ½ cup sliced onion.

8. Add prepared masala paste.

9. Mix well and cook on medium flame for 3-5 minutes. While stirring occasionally. Roast until oil will separate.

10. Add the sautéed jackfruit. Mix it well.


11. Add 1 ½ cups of water.

12. Mix well and pressure cook for 2 whistles.

14. Allow the steam to escape before opening the lid.

15. Serve kathal ki sabzi hot garnished with coriander.
