Nani Wala Omelette

There are lots and lots of my mother’s special recipes. Today, I am sharing my mother’s special omelette recipe by which you can make a really fluffy and tasty omelette, using only one egg.

In Mummy’s dictionary, there was a major difference between omelette and aamlate. She used to say that if you mix everything together and fry the mixture, you will not get an omelette, but an aamlate, just like what you get from any nukkad wala aamlate shop.

When we asked her, what was the difference between omelette and an aamlate, she said: “Usually, you would see people making an omelette after mixing everything together but for making an omelette, egg white is beaten separately from the yolk, which makes the omelette fluffy.”

Usually, during their summer vacations my children spent some days at their nani’s house. One day, my mother made an omelette for my son. He was very surprised to see the size of the omelette. He asked my mother “How many eggs have you used for this omelette?” She smiled and replied “Only one egg.” My son was awestruck. He said “How come can you make such a big omelette with only one egg? My mother cannot make such a big omelette.” Mummy laughed and said “Your mother is lazy. She makes aamlates, not omelettes.” When my son came back from nani’s house he narrated this incident to me and asked me to make a nani wala omelette, not my kind of aamlate. After this episode instead of simply saying omelette, we used to say “Nani wala omelette”

Serves: One person

Ingredients:

1. Egg – 1

2. Chopped Onion – 1 small

3. Chopped tomato – 1 small

4. Chopped coriander leaves – 1 tsp

5. Chopped green chilli -1

6. Chopped ginger -1/2 tsp (optional)

7. Salt according to taste

8. A dash of pepper

9. Butter / ghee – 2 tsp

Method:

1. Carefully break the egg and carefully separate the egg white from the egg yellow yolk. You can use egg white separator.

2. Keep the yellow yolk aside.

3. Now take egg white in a bowl. Beat the egg white with an egg beater or with a hand blender.

4. Beat egg white until egg white foam becomes stiff.

5. Now add the yellow yolk to the egg white and beat it again.

6. At the same time, when you start beating the egg, put a saucepan on a slow flame for heating

7. Now put 1 tsp ghee/butter in a pan. Heat the pan.

8. Pour egg mixture carefully in the heated pan.

9. When top surface of egg is becomes thick and liquid egg is not visible, place chopped vegetables on the omelette.

10. Sprinkle salt and pepper on it.

11. Now cover the pan for some time until the egg gets cooked.

12. Fold omelette in half with turner.

13. After one minute, turn the egg. Fry for 1 more minute.

14. Your omelette is done.

15. Now you can serve your omelette with bread or sauté vegetables.

Tips:

1. Never beat egg white and yellow together. Otherwise, the omelette will not be fluffy.

2. Always use a dry pan for beating the egg.

3. Never add salt while beating the egg. If you add salt, the mixture will not be fluffy.

4. You can add grated cheese, sliced sausages or salami, mushrooms, capsicum etc.

5. Always cover the pan while making the omelette. This will make the omelette rise more.
